I would say approx. 7-8 hours on low. If you cook it too long, it won't burn it will just be really, really tender. Not everyone likes it that tender and if you don't, just check it with a meat thermometer for doneness. I'm sorry I don't know off the top of my head what the temperature is supposed to be. Just remember that when you serve the roast make sure you let it set on a plate or cutting board for 10 minutes before cutting it. It makes it so much easier to cut.
